Culinary delights at The Ritz-Carlton Maldives, Fari Island

The Ritz-Carlton Maldives, Faru Islands presents a feast for true foodies because the resort welcomes two master chefs this summer. These exclusive stays are a part of the property’s established Masters of Crafts series. The series showcases the world’s most famous stars in foods and drinks, wellness, adventure and environmental innovation and is rigorously curated as a group of guest experiences that embody the essence of transformative travel.

Chef Pam Pichaya Soontornyanakij, named Asia’s Best Chef 2024, shall be the primary female chef to take over The Ritz-Carlton Maldives, Fari Islands’ Summer Pavilion, the celebrated Indian Ocean outpost of Michelin-starred restaurant The Ritz-Carlton, Millenia Singapore. On August 10 and 11, Chef Pam will showcase her culinary skills at POTONG in Bangkok (ranked seventeenth in Asia’s 50 Best Restaurants) in a setting renowned for its design and culinary heritage. Matteo Cadeddu of Opium (ranked 59th in Asia’s 50 Best Bars) will serve his expertly crafted cocktails on the resort’s iconic EAU Bar on August 9 and 10.

The first and youngest chef to receive a Michelin star and the Michelin Guide’s “Opening of the Year” award at the identical time is Chef Pam presents a delicious eight-course tasting menu that highlights their revolutionary Thai-Chinese cuisine. The resort’s opulent surroundings are the proper backdrop for an unforgettable sensory experience. Guests enter the Summer Pavilion through the circular ‘moon gate’ entrance, meander through the water courtyard and garden before getting into a lantern-lit dining room that appears to drift above the crystal clear waters of the Indian Ocean.

Reflecting her unique storytelling skills, Chef Pam’s menu includes quite a lot of dishes corresponding to ‘POTONG’s Pad Thai’, which mixes tradition and innovation in Thailand’s national dish, and ‘Yin Yang Noodle’, which evokes childhood memories with morels and creamy chicken broth. Courses include POTONG’s evolution of crab and five-spice pigeon, followed by desserts corresponding to Pam’s chocolate ball.

“I am so excited to bring the flavours of POTONG to The Ritz-Carlton Maldives, Fari Islands and its incredible culinary scene. Being part of the resort’s commitment to culinary excellence and discovery is a real privilege and offering this from the Summer Pavilion, a restaurant with a rich Cantonese culinary heritage, feels like a very organic meeting of sensibilities,” says Chef Pam. “I hope to offer guests an element of surprise with my menu. When people think of Thai food, they think northern, southern, central or northeastern, but Thai-Chinese food is a sub-cuisine. The Chinese have been migrating to Thailand for over 800 years and have brought a lot of food culture with them. I look forward to presenting my menu – 5 senses, 5 elements, a journey through time – in this unique setting, for a truly unparalleled and thought-provoking dining experience.”

In a delicious pairing, Matteo Cadeddu of Opium will take over The Ritz-Carlton Maldives, Fari Islands’ EAU Bar. A frequent feature on the prolonged list of Asia’s 50 Best Bars, the Bangkok gem brings its incredible “liquid surrealism”-inspired drinks to the property’s Behind the Bar series. Just in time to look at the sunset, Cadeddu presents a standout collection of poolside drinks. Drinks include the adventurous “Han Solo,” which mixes mezcal, pineapple tepache, lime, honey, soda and orange bitters, and “Incognito,” which incorporates a mysterious mix of gin and bergamot liqueur.

EAU Bar is an unforgettable place to benefit from the world’s finest drinks, while the resort’s day by day sunset ritual, featuring a Bodu Beru performance of Maldivian drums and an Instagram-worthy flame ceremony, provides an unforgettable backdrop.
